Sinigang is a Filipino soup known for its tangy and savory flavor. It is typically made with a tamarind-based broth and can include a variety of meats or seafood, as well as a mix of vegetables. It's one of our favorite dishes to make on snowy, winter days.
Ingredients:
- 1 lb of beef ribs
- 2-3 cloves of garlic, chopped
- ½ to 1 onion, roughly chopped
- 1 tomato
- Greens (kangkong or spinach)
- 1 gabi or taro
- Green beans or sitaw (optional)
- Eggplant and okra (optional)
- Sinigang packet mix (or use tamarind paste)
- Cooked rice
Instructions:
In a large pan sauté onion with neutral cooking oil until brown. Add garlic and cook until fragrant. Add ribs and char. In the crockpot add tomatoes and hardier vegetables (eggplant, taro, green beans, okra). Add 1 pack of Sinigang mix along with 8-10 cups of water. Add the sautéd meat. Cook on low for 7-8 hours or high for 4-5 hours. When done, add greens ( kangkong or spinach) and cook until soft.
Sinigang is traditionally served with rice. The combination of the sour soup and rice makes for a satisfying and comforting meal.
